I am not sure if it makes more sense to fix the provided schemas or enforce that users and other libraries pass correct pyarrow schemas that are compatible with delta

I think we should provide a utility to cast the data, whenever possible.

I am working on PR in Polars repo to do some schema casting to make it delta compatible.
